I’ve been stealing a line from Aaron Franklin and saying that “brisket is my spirit animal” lately, but to be perfectly honest with you, I couldn’t be more pleased with the way that my pork has been coming out ever since I tweaked my rub a bit about two week ago.
That is why I am super excited for today’s special: The Smoked Pork Grilled Cheese. This sandwich comes with a big pile of that smoked pork along with provolone and American cheese melted together between two slices of Mancini’s Italian bread.
